Instructions
- Mash the ripe bananas in a bowl.
- Add the eggs and oats to the mashed bananas.
- Stir in cinnamon if desired. Mix until well combined.
- Heat a lightly oiled griddle or frying pan over medium heat.
- Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
- Cook for about 2-3 minutes per side, until golden brown and cooked through.
- Serve warm with your favorite toppings.
