Instructions

  1. In a large bowl, combine warm water, yeast, and sugar. Let sit for 5 minutes until foamy.
  2. Stir in salt and gradually add bread flour, mixing until a shaggy dough forms.
  3. Turn the dough out onto a lightly floured surface and knead for 8-10 minutes, or until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with plastic wrap, and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  5. Gently punch down the dough and divide it into 8 equal pieces.
  6. Shape each piece into a ball, then use your thumb to create a hole in the center, stretching it to about 1 inch in diameter.
  7. Place the shaped bagels on a parchment-lined baking sheet, cover loosely with plastic wrap, and let rest for 15-20 minutes.
  8. Preheat your oven to 425°F (220°C). Bring a large pot of water to a rolling boil and add baking soda.
  9. Carefully drop 2-3 bagels into the boiling water and cook for 30 seconds to 1 minute per side.
  10. Remove the bagels with a slotted spoon and place them back on the parchment-lined baking sheet.
