- 2 teaspoons active dry yeast
- 1 tablespoon granulated sugar
- 1 teaspoon salt
- 3 ½ cups bread flour, plus more for dusting
- 1 tablespoon baking soda (for boiling water)
- 1 egg white, beaten (for glaze, optional)
- Sesame seeds or poppy seeds (for topping, optional)
Instructions
- In a large bowl, combine warm water, yeast, and sugar. Let sit for 5 minutes until foamy.
- Stir in salt and gradually add bread flour, mixing until a shaggy dough forms.
- Turn the dough out onto a lightly floured surface and knead for 8-10 minutes, or until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with plastic wrap, and let rise in a warm place for 1-1.5 hours, or until doubled in size.
- Gently punch down the dough and divide it into 8 equal pieces.
- Shape each piece into a ball, then use your thumb to create a hole in the center, stretching it to about 1 inch in diameter.
- Place the shaped bagels on a parchment-lined baking sheet, cover loosely with plastic wrap, and let rest for 15-20 minutes.
- Preheat your oven to 425°F (220°C). Bring a large pot of water to a rolling boil and add baking soda.
- Carefully drop 2-3 bagels into the boiling water and cook for 30 seconds to 1 minute per side.
- Remove the bagels with a slotted spoon and place them back on the parchment-lined baking sheet.
- If desired, brush the tops of the bagels with beaten egg white and sprinkle with sesame seeds or poppy seeds.
- Bake for 18-20 minutes, or until golden brown.
- Let cool on a wire rack before serving.
Notes
- For a chewier bagel, increase the boiling time slightly.
- You can make these bagels ahead of time and freeze them after shaping, before boiling and baking.
