- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1 cup chopped apples (Fuji or Gala recommended)
- Optional Streusel Topping: 1/2 cup flour, 1/4 cup brown sugar, 1/4 cup cold butter, 1/2 teaspoon cinnamon
Instructions
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it well.
- In a medium bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
- In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined; do not overmix.
- Gently fold in the chopped apples.
- If making the streusel topping, combine all streusel ingredients in a small bowl and cut in the cold butter with your fingers or a pastry blender until crumbly.
- Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full. Sprinkle streusel topping over the batter, if using.
- Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For healthier muffins, you can substitute some of the all-purpose flour with whole wheat flour and reduce the sugar slightly.
- Ensure your apples are chopped into small, uniform pieces for even distribution.
