Description

- 1 pound chicken breast, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 cup broccoli florets
- 1/2 cup chicken broth
- 1/4 cup soy sauce (low sodium)
- 1 tablespoon cornstarch
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together chicken broth and cornstarch. Set aside.
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add chicken pieces and cook until browned on all sides. Remove chicken from skillet and set aside.
- Add onion and bell pepper to the skillet and cook until softened, about 5 minutes.
- Add garlic and broccoli florets and cook for another 2 minutes.
- Pour in the soy sauce and bring to a simmer.
- Stir in the cornstarch mixture and cook until the sauce thickens, about 1-2 minutes.
- Return the chicken to the skillet and toss to coat with the sauce.
- Season with salt and pepper to taste.
- Serve hot.
Notes
- You can substitute chicken with shrimp or tofu.
- Add other vegetables like carrots or snap peas.
- Serve over brown rice or quinoa for a complete meal.
