Ingredients
1 cup glutinous rice flour
1 cup water
1 pint strawberry ice cream (preferably homemade or store-bought)
Optional: powdered sugar or cornstarch for dusting
Instructions
Whisk 1 cup glutinous rice flour and 1 cup water in a microwave-safe bowl until smooth.
Cover and microwave on high for 1 minute.
Stir quickly, cover again, and microwave for another minute.
Repeat microwaving in 30-second intervals, stirring each time, until the dough is glossy and chewy (about 8-10 minutes total).
Dust a surface with powdered sugar or cornstarch to prevent sticking.
Place the dough on the surface and let cool for 5 minutes.
Cut the dough into 8 equal squares using a sharp knife or scissors.
Place a small scoop of strawberry ice cream in the center of each square.
Pinch the edges to seal into balls, working quickly before the ice cream melts.
Freeze the shaped mochi on a tray for at least 1 hour before serving.
Notes
Storage: Keep mochi ice cream balls tightly wrapped in an airtight container in the freezer for up to 1 week
For easier handling, chill the dough for 10-15 minutes before shaping
